That's very cool indeed! Before I became a Mopor guy back in the 1980's I owned several AMC, GM and Ford muscle cars including a 1965 Mustang hardtop and two 1967 Mustang fastbacks, so I still have a soft spot in my heart for the 1965 through 1968 Mustangs.
Below are pictures of a real car similar to what the model was fashioned after. The major difference is that the real car is an automatic and the model is a 4 speed.

Did your uncle order the car from Shelby brand new? If so, he could have ordered the street version with a roll bar, as Shelby would build them any way the customer wanted them.

Not sure if he ordered it or just saw one on the lot
